  • 1 cup all-purpose flour

  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • Maple cream for topping

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Poach the pears: In a saucepan, bring 1 cup of red wine to a gentle simmer. Peel, core, and slice the pears, then gently add them to the liquid. Poach for about 10-15 minutes.
  3. Mix the dry ingredients: In a mixing bowl, whisk together the flour, baking powder, baking soda, ground cardamom, and salt.
  4. Cream the butter and sugar: In another bowl, beat the softened butter and sugar until fluffy and pale, about 3-4 minutes.
  5. Add the eggs and vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture, alternating with buttermilk.
  7. Incorporate poached pears: Gently fold in the poached pears into your batter.
  8. Pour into prepared pan: Pour the batter into your prepared cake pan, smoothing the top with a spatula.
  9. Bake to perfection: Place in the oven and bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool and release: Allow the cake to cool in the pan for 10 minutes, then gently remove and transfer to a wire rack to cool completely.
