Cheesy Hamburger Potato Casserole

A heartwarming casserole with layers of tender potatoes, savory ground beef, and gooey melted cheddar cheese.

  • 1 pound ground beef
  • 4 medium russet potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the beef: Heat olive oil in a skillet, sauté onion until translucent, add ground beef, season, and cook until browned.
  3. Combine the cream of mushroom soup with milk until smooth.
  4. Layer half of the sliced potatoes, followed by half of the beef mixture, half of the soup mixture, and one cup of cheese in a baking dish. Repeat layers.
  5. Top with the remaining cheese.
  6. Bake covered for 45 minutes, then uncover and bake for an additional 15-20 minutes until cheese is bubbly.
  7. Cool for 10 minutes before serving.

Notes

Garnish with fresh parsley or chives for color. Great with a side salad or bread.
