Easy Hamburger Potato Casserole

A comforting and hearty casserole loaded with potatoes, ground beef, and cheese, perfect for family gatherings and busy weeknights.

  • 1 lb Ground Beef
  • 4 Medium Potatoes, Thinly Sliced
  • 2 cups Cheddar Cheese, Shredded
  • 1 Onion, Chopped
  • 1 can Cream of Mushroom Soup
  • 1 cup Milk
  • Salt and Pepper to taste
  • Optional: Parsley for Garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef and onions in a large skillet over medium heat for 5-7 minutes, draining excess fat if necessary.
  3. Prepare the potatoes by slicing them into thin, even pieces.
  4. Layer half of the potatoes in a greased 9×13 inch baking dish, followed by half of the beef mixture, half of the cream of mushroom soup, a drizzle of milk, and a sprinkle of cheddar cheese. Repeat the layers, ending with cheese on top.
  5. Bake covered with aluminum foil for 45 minutes, then uncover and bake for an additional 15-20 minutes until the cheese is golden and bubbly.
  6. Let the casserole rest for about 10 minutes before serving.

Notes

Serve with a sprinkle of parsley and consider pairing with a green salad or steamed veggies.
