A delightful pie featuring ripe summer tomatoes, gooey cheese, and fresh basil, evoking comfort and nostalgic family gatherings.

  • 45 medium tomatoes, sliced
  • 1 onion, sliced
  • 1 cup fresh basil, chopped
  • 12 cups shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the crust by rolling it out into your pie dish.
  3. Layer the sliced tomatoes in a single layer in the pie crust.
  4. Add the sliced onion over the tomatoes.
  5. Sprinkle the chopped basil over the onions, then add the cheese.
  6. Drizzle the olive oil over the top.
  7. Season with salt and pepper to taste.
  8. Bake the pie for about 30-40 minutes until the crust is golden brown.
  9. Cool for 10 minutes before serving.

Notes

For a richer flavor, caramelize the onions before adding. Can add proteins like bacon or chicken for variation.
