  • 1 apple (diced)
  • 2 cans white beans (drained)
  • 4 cups vegetable broth
  • 1 onion (diced)
  • 1 tbsp olive oil
  • 1 tsp rosemary

Instructions

  1. Prep your ingredients: Start by washing your fennel bulb, apple, and onion. Slice the fennel thinly, dice the apple, and chop that onion.
  2. Sauté the aromatics: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sliced fennel, sautéing for about 5-7 minutes.
  3. Add the apple: Toss in the diced apple and stir to combine, letting it cook for another 3-4 minutes.
  4. Introduce the beans & broth: Add in the drained white beans, pour in the vegetable broth, and sprinkle the rosemary into the pot. Stir gently.
  5. Bring to a simmer: Increase the heat to bring the soup to a gentle simmer, then reduce the heat and let it simmer for 15-20 minutes.
  6. Blend to perfection: Use an immersion blender or transfer the soup to a blender for a smooth finish.
  7. Adjust seasoning: Taste your soup and add salt, lemon, or maple syrup as desired.
  8. Serve & enjoy: Ladle the soup into bowls and top with fresh herbs or croutons.
