Vegan Apple Wild Rice Pilaf

  • 2.5 cups vegetable broth
  • 1 apple, diced
  • 1/3 cup dried cranberries
  • 1/3 cup pecans, chopped
  • 1 tbsp olive oil

Instructions

  1. Rinse the wild rice: Start by giving your wild rice blend a gentle rinse in cold water.
  2. Cook the rice: In a saucepan, bring your vegetable broth to a boil, and add the rinsed wild rice blend. Reduce heat to low, cover, and let it simmer for about 45-50 minutes.
  3. Sauté the apples and cranberries: In a separate skillet, heat the olive oil. Add the diced apple and dried cranberries, sautéing until the apples soften.
  4. Combine the elements: Fluff the cooked rice with a fork and transfer it to the skillet, tossing gently for an additional 2-3 minutes.
  5. Add the pecans right before serving to retain their crunch.

Notes

Garnish with extra pecans and parsley; serve as a side or main dish.
