Creamy Butternut Squash Soup

  • 1 medium butternut squash, peeled and cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)

Instructions

  1. Prepare your ingredients: Peel and cube your butternut squash, chop the onion and carrots, and mince the garlic.
  2. Sauté the veggies: In a large pot, heat the olive oil over medium heat and toss in the chopped onion and carrots, softening for 5-7 minutes.
  3. Add the garlic: Stir in the minced garlic and cook for about a minute until fragrant.
  4. Cook the squash: Add the butternut squash to the pot and stir, letting it mingle with the veggies for another 5 minutes.
  5. Pour in the broth: Add the vegetable broth, bring to a boil, then reduce to a simmer for about 20-25 minutes.
  6. Blend it up: Once tender, use an immersion blender to puree the soup until smooth.
  7. Season and cream it up: Return to low heat and stir in the spices and heavy cream if desired.
  8. Taste and adjust: Before serving, taste your soup and add any additional seasoning as needed.

Notes

For added creaminess, substitute heavy cream with coconut milk. Adjust spices as per your taste.
