Ranch Fiesta Dip

A creamy and colorful dip perfect for summer gatherings, packed with vibrant vegetables and ranch flavor.

  • 2 8 oz packages cream cheese, softened
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and diced
  • 1 small can of black olives, drained and diced
  • 1 can of corn, drained
  • 1 packet of ranch dip seasoning mix

Instructions

  1. Soften the cream cheese by removing it from the fridge and letting it sit out. For a quicker method, cut into cubes and microwave for 15 seconds at a time until soft.
  2. Mix the softened cream cheese in a large bowl using a hand mixer or spatula until smooth.
  3. Add the ranch dip seasoning mix while continuing to blend it into the cream cheese.
  4. Toss in the diced vegetables—red bell pepper, jalapeño, black olives, and corn. Mix gently to combine.
  5. Taste the dip and adjust seasoning as needed. Add spice if desired.
  6. Chill the dip in the refrigerator for at least an hour before serving.
  7. Serve with tortilla chips, veggie sticks, or pita bread.
