  • 2 pounds chicken breasts
  • 1 cup salsa
  • 1 cup rice
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • Cilantro lime vinaigrette

Instructions

  1. Prepare the chicken by placing it in the slow cooker and pouring salsa over it.
  2. Add the uncooked rice over the chicken and salsa mixture.
  3. Include the drained black beans to the slow cooker.
  4. Cover and set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  5. Check the chicken’s tenderness; it should shred easily with a fork.
  6. Assemble your bowls by shredding the chicken and mixing everything together.
  7. Top with diced avocado, shredded cheese, and chopped cilantro.

Notes

For a spicier kick, add diced jalapeños or sprinkle chili powder before serving. This dish also freezes well for up to three months.
