Slow Cooker Italian Summer Soup

A light and fresh Italian summer soup made easy in a slow cooker, perfect for busy weeknights or lazy weekends.

Ingredients

  • 2 tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, chopped
  • 2 stalks Celery, chopped
  • 1 Bell Pepper, chopped
  • 1 Zucchini, chopped
  • 1 can Crushed Tomatoes
  • 4 cups Vegetable Broth
  • 2 teaspoons Italian Seasoning
  • Salt & Pepper to taste
  • 1/4 cup Fresh Basil, chopped

Instructions

  1. Prep the vegetables by chopping your onions, carrots, and celery into small, even pieces.
  2. Sauté the base in a skillet with olive oil over medium heat for about 5 minutes.
  3. Transfer the sautéed vegetables into your slow cooker.
  4. Add the chopped bell peppers and zucchini.
  5. Pour in the crushed tomatoes and vegetable broth, and mix gently.
  6. Sprinkle in your Italian seasoning, along with salt and pepper, and set the slow cooker.
  7. Stir in the fresh basil about 30 minutes before serving.

Notes

For added flavor, drizzle good-quality olive oil on top just before serving. Leftovers can be stored in an airtight container for 4-5 days.
