Slow Cooker Street Corn Chicken

A creamy, comforting dish that combines tender chicken and the flavors of street corn, all made effortlessly in a slow cooker.

  • 1 lb Boneless Chicken Breasts or Thighs
  • 2 cups Corn
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese
  • 1 Lime
  • 2 Cloves Garlic, minced
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (Optional)

Instructions

  1. Prepare the chicken by placing it at the bottom of the slow cooker.
  2. Add the corn on top of the chicken.
  3. Cut the cream cheese into small chunks and scatter over the corn.
  4. Sprinkle the cotija cheese, garlic, chili powder, smoked paprika, onion powder, and lime juice over the layers.
  5. Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, carefully shred the chicken right in the pot.
  7. Taste and adjust the seasoning as needed.
