Grandma’s Chicken Pot Pie

  • 2 cups cooked and shredded chicken
  • 1 cup frozen peas and carrots
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 tablespoons butter
  • 1/3 cup flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cook the chicken: If using raw chicken, poach it in water until cooked through, then shred.
  3. Sauté the vegetables: In a skillet, melt 2 tablespoons butter, add onion and garlic, and sauté until translucent.
  4. Add the potatoes: Toss diced potatoes into the skillet and cook until they begin to soften.
  5. Create the roux: Add remaining butter and flour, stirring for about 2 minutes until golden.
  6. Pour in the chicken broth: Whisk in broth and allow to thicken.
  7. Stir in cream and spices: Add heavy cream, thyme, salt, and pepper, simmering for a few minutes.
  8. Mix in the chicken and veggies until evenly coated.
  9. Transfer to a pie dish: Pour the filling into a pie dish.
  10. Top with pie crust: Roll out the crust, cover the filling, and poke vents.
  11. Bake: Bake in the oven for 30-35 minutes or until golden brown.
  12. Cool and slice: Let the pie cool for about 10 minutes before serving.
