Summer Berry Jello Lasagna

A colorful and delightful dessert featuring layers of berry-flavored Jello, cream cheese, and fresh berries, perfect for summer gatherings.

  • 1 package of berry-flavored Jello
  • 2 cups of boiling water
  • 1 cup of cold water
  • 1 package of cream cheese (8 oz), room temperature
  • 1 cup of powdered sugar
  • 1 cup of whipped topping
  • 1 package of graham crackers (about 14 crackers)
  • 2 cups of mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Prepare the Jello by boiling 2 cups of water and mixing in the package of berry-flavored Jello until fully dissolved. Add 1 cup of cold water and stir. Set aside to cool slightly.
  2. Whip together the softened cream cheese and powdered sugar until smooth. Gently fold in the whipped topping.
  3. Assemble the lasagna by laying a single layer of graham crackers in a 9×13-inch baking dish. Pour half of the prepared Jello over the crackers, followed by half of the cream cheese mixture and a layer of mixed berries.
  4. Repeat the layering with another layer of graham crackers, the rest of the Jello, the remaining cream cheese mixture, and top with the leftover berries.
  5. Cover with plastic wrap and refrigerate for at least 240 minutes or overnight to set.
  6. Serve by cutting into squares and garnishing with a dollop of whipped cream, if desired.

Notes

For added texture, consider adding crushed nuts or swapping out fruits based on seasonal availability. Enjoy with a mint garnish!
