Caprese Bruschetta

A delightful Italian appetizer featuring crusty bread topped with fresh tomatoes, creamy mozzarella, and aromatic basil.

  • 4 ripe Fresh Tomatoes, diced
  • 8 oz Creamy Mozzarella Cheese, sliced
  • 1 cup Fresh Basil Leaves, torn
  • 1 Baguette or Crusty Bread, sliced
  • 3 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep the Tomatoes: Wash and dice the tomatoes into small cubes.
  2. Season the Tomatoes: Combine diced tomatoes, salt, pepper, and olive oil in a bowl. Let rest for 10 minutes.
  3. Slice the Bread: Cut baguette into diagonal slices about ½ inch thick.
  4. Toast the Bread: Preheat oven to 400°F (200°C) and toast bread on a baking sheet for 5-7 minutes until golden.
  5. Prepare the Mozzarella: Slice or tear fresh mozzarella into rounds.
  6. Assemble the Bruschetta: Layer marinated tomatoes on toasted bread, topping with mozzarella.
  7. Add Fresh Basil: Sprinkle torn basil over the top.
  8. Finishing Touches: Drizzle balsamic vinegar and sprinkle salt and pepper to taste.

Notes

Serve on a rustic platter, garnished with extra basil. Pairs well with white wine or sparkling lemonade.
