Sweet Hawaiian Crock Pot Chicken

A delightful Hawaiian-inspired dish featuring tender chicken marinated in pineapple juice and soy sauce.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic (minced)
  • 1 teaspoon ground ginger (optional)
  • 1 cup pineapple chunks (for garnish)
  • 1 medium red bell pepper (thinly sliced)
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 4 cups rice
  • Salt & pepper (to taste)
  • Green onions (optional garnish)
  • Sesame seeds (optional garnish)

Instructions

  1. Prep your ingredients: Measure and prep all ingredients for smooth cooking.
  2. Mix your sauce: In a bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, and ground ginger, whisking until dissolved.
  3. Nestle the chicken in the bottom of the crock pot, ensuring it’s coated with the sauce.
  4. Add the bell pepper slices on top of the chicken.
  5. Cook low and slow: Cover and set to low for 6-8 hours or high for 3-4 hours.
  6. Create a thick sauce: Whisk cornstarch and water, stir into the cooking liquid, and set on high for 15-20 minutes to thicken.
  7. Cook the rice according to package instructions.
  8. Combine and serve: Return shredded chicken to sauce, mix, and serve over rice with pineapple chunks.

Notes

Add chili flakes for spice or mixed veggies for extra nutrition. Leftovers make great sandwiches!
