Sweet Hawaiian Crockpot Chicken

A flavorful slow-cooked dish featuring tender chicken thighs, sweet pineapple, and savory teriyaki sauce for a tropical meal that’s easy to prepare.

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prep the chicken: Rinse chicken thighs under cold water and pat dry.
  2. Sear the chicken (optional): Brown chicken in a skillet over medium-high heat for 3-4 minutes on each side.
  3. Combine sauces: Mix teriyaki sauce, soy sauce, brown sugar, garlic powder, and ground ginger in a bowl.
  4. Layer in the crockpot: Place chicken in slow cooker and pour sauce mixture over it. Add pineapple and sliced peppers.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. Check for doneness: Ensure chicken is cooked to an internal temperature of 165°F (75°C).
  7. Shred the chicken (optional): Remove chicken, shred, and return to crockpot to mix.

Notes

Serve over rice or alongside a salad. Add toasted sesame seeds for extra crunch.
