The Ultimate Birthday Cake

A delightful birthday cake recipe perfect for celebrating life’s sweetest moments with family and friends.

Ingredients

  • 250 g unsalted butter
  • 200 g sugar
  • 4 egg yolks
  • 2 dl milk
  • 150 g all-purpose flour
  • 2 tsp baking powder
  • 4 egg whites (approx. 120 g)
  • 300 g sugar (for frosting)
  • 2 tsp vanilla sugar
  • 100 g chopped almonds
  • 4 dl heavy cream
  • 2 dl crème fraîche
  • 2 dl neutral skyr
  • 2 tsp vanilla sugar
  • Fruit of choice for topping

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. Prepare your cake pans by greasing them with butter and dusting with flour.
  3. Cream 250 g of butter and 200 g of sugar until fluffy and light.
  4. Incorporate 4 egg yolks one at a time, mixing after each addition.
  5. Mix 2 dl of milk with the combined 150 g of flour and 2 tsp of baking powder until just combined.
  6. Whip the egg whites until soft peaks form, then gradually add 300 g of sugar.
  7. Fold the whipped egg whites into the batter gently.
  8. Pour the batter into the prepared pans.
  9. Bake for 25-30 minutes until a toothpick comes out clean.
  10. Cool the cakes in the pans for 10 minutes before transferring to cooling racks.
  11. Prepare the frosting by whipping 4 dl of heavy cream with 2 dl of crème fraîche and 2 tsp of vanilla sugar until soft peaks form.
  12. Assemble the cake by layering and frosting between the cakes.
  13. Garnish with chopped almonds and fruit of choice.
