Tomato and Basil Bruschetta

A vibrant and flavorful bruschetta made with fresh tomatoes, basil, and a touch of olive oil, perfect for summer gatherings.

  • 2 cups cherry (or grape) tomatoes, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/3 cup basil, chopped (or more if desired)
  • Salt and pepper to taste
  • Balsamic glaze (optional)
  • 1 large whole wheat baguette, sliced into 1/2-inch slices
  • 2 tablespoons olive oil (for brushing)
  • 1 clove garlic, sliced in half

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your ingredients by washing and slicing the tomatoes and mixing with garlic, balsamic vinegar, olive oil, basil, salt, and pepper.
  3. Toast the baguette slices on a baking sheet for about 5-7 minutes, until lightly golden.
  4. Rub the toasted bread with the halved garlic clove.
  5. Top each slice with the tomato mixture.
  6. Garnish with extra basil and serve immediately.
