2 tbsp olive oil
1 sweet onion, diced
10–14 cloves garlic, minced
2 lbs ground turkey
56 oz (2 cans) petite diced tomatoes
32 oz (2 cans) tomato sauce
1 cup chicken broth
2 large sweet potatoes (about 24 oz), cubed into 1-inch pieces
2 tbsp chili powder
2 tsp smoked paprika
1 tsp ground cumin
2 tbsp granulated sugar
2 cups frozen corn
Salt and black pepper to taste
Garnish:
½ cup chopped cilantro
⅔ cup shredded cheddar cheese
4 avocado slices (1 per serving)
n a large pot, heat olive oil over medium heat. Sauté onion until soft.
Add garlic and cook for 1–2 minutes.
Stir in ground turkey, cooking until browned and crumbled.
Add diced tomatoes, tomato sauce, chicken broth, sweet potatoes, chili powder, smoked paprika, cumin, and sugar. Stir well.
Bring to a boil, then reduce heat and simmer covered for 25–30 minutes, until sweet potatoes are tender.
Stir in frozen corn and simmer another 5 minutes.
Season with salt and pepper to taste.
Serve hot with cilantro, cheddar, and avocado slices.
