Huckleberry Delight

Delightful huckleberry desserts that are sweet, tart, and bursting with flavor, perfect for any occasion.

Ingredients

  • Fresh Huckleberries (2 cups)
  • Granulated Sugar (¾ cup)
  • All-Purpose Flour (1 ½ cups)
  • Unsalted Butter (½ cup, softened)
  • Eggs (2 large)
  • Baking Powder (1 teaspoon)
  • Vanilla Extract (1 teaspoon)
  • Milk (½ cup)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan or an 8×8 inch square pan, greasing it lightly.
  3. Mix the dry ingredients: flour, sugar, baking powder, and a pinch of salt.
  4. Cream the butter and sugar until light and fluffy.
  5. Add the eggs, one at a time, followed by the vanilla extract.
  6. Combine the dry and wet ingredients, alternating with the milk.
  7. Fold in the huckleberries gently.
  8. Pour the batter into the baking dish and sprinkle extra huckleberries on top.
  9. Bake for about 30–35 minutes, until a toothpick comes out clean.
  10. Cool for 10 minutes, transfer to a wire rack, and dust with powdered sugar before serving.

Notes

For variations, try adding lemon zest, coconut milk, or chocolate chips. Serve warm with whipped cream or ice cream.
