Homemade Vanilla Pudding

A creamy and dreamy homemade vanilla pudding that takes you back to childhood memories.

Ingredients

  • 2 cups Milk (whole or non-dairy)
  • 1/4 cup Powdered Sugar
  • 1/4 cup Cornstarch
  • 1/4 cup Vanilla Sugar (or granulated sugar with vanilla extract)
  • 1 Apple (finely chopped, for compote)

Instructions

  1. Prepare your ingredients: Measure out all the ingredients to ensure a smooth process.
  2. Make the apple compote: In a saucepan, cook chopped apple with a tablespoon of sugar over medium heat for 6-8 minutes until softened.
  3. Mix the dry ingredients: Combine cornstarch, powdered sugar, and vanilla sugar in a mixing bowl and whisk until smooth.
  4. Heat the milk: In a saucepan, heat the milk over medium, stirring occasionally until steam rises but not boiling.
  5. Combine the mixtures: Whisk the dry ingredients into the heated milk until dissolved, then return to low heat.
  6. Thicken the pudding: Stir constantly over low heat for 5-7 minutes until thickened.
  7. Add the compote (if using): Swirl in the apple compote until combined.
  8. Cool it down: Pour into bowls and cover with plastic wrap to prevent a skin.
  9. Chill: Cool at room temperature for 15 minutes then refrigerate for at least 2 hours until set.

Notes

Serve with fresh fruit, whipped cream, or a sprinkle of cinnamon for added flavor.
