Weight Watchers Butternut Squash Soup

A cozy and heartwarming butternut squash soup that transforms simple ingredients into a velvety, delicious bowl of goodness.

Ingredients

Scale
  • 1 medium butternut squash, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk (optional)
  • Salt and pepper to taste
  • Olive oil
  • Optional toppings: pumpkin seeds, fresh herbs

Instructions

  1. Prepare the butternut squash: Start by peeling and chopping your butternut squash into equal-sized cubes (about 1-inch pieces).
  2. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add your chopped onion and cook for about 5-7 minutes.
  3. Add the butternut squash and broth: Toss in the diced butternut squash and give everything a gentle stir. Pour in the vegetable broth.
  4. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes until the squash is fork-tender.
  5. Blend it up: Remove the pot from the heat. Using an immersion blender, blend until smooth and creamy.
  6. Stir in the coconut milk: For a creamy touch, stir in the can of coconut milk. Heat the soup over low heat for a few minutes.
  7. Serve: Ladle the soup into bowls and dress it up with your favorite toppings.
