Whipped Feta and Roasted Red Pepper Dip

A creamy and flavorful dip that pairs tangy feta with sweet roasted red peppers, perfect for gatherings.

  • 8 oz Feta Cheese
  • 1/2 cup Roasted Red Peppers
  • 1/3 cup Greek Yogurt
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1 clove Garlic
  • 1/2 tsp Smoked Paprika
  • Fresh Parsley for Garnish

Instructions

  1. Prepare the Red Peppers: Preheat your oven to 450°F (232°C). Cut the peppers in half, remove the seeds, and place them on a baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt. Roast for about 20-25 minutes or until the skin gets blistery and dark. Flip halfway through for even cooking.
  2. Blend the Ingredients: In a food processor or blender, combine the feta cheese, roasted red peppers (once cooled), Greek yogurt, olive oil, lemon juice, garlic, and smoked paprika.
  3. Pulse to Perfection: Blend all the ingredients together until silky smooth. If too thick, add a splash of water or more olive oil.
  4. Taste and Adjust: Sample the dip and tweak flavors as needed with more lemon or salt.
  5. Chill and Serve: Transfer the dip to a serving bowl and chill in the refrigerator for at least 30 minutes before serving.

Notes

For a spicy kick, consider adding chopped jalapeños or sriracha. Garnish with fresh herbs for added flavor.
