Whipped Feta and Tomato Bruschetta

A delightful appetizer featuring creamy whipped feta and fresh diced tomatoes on crispy toasted bread.

Ingredients

  • Baguette or Italian bread
  • Whipped feta cheese
  • Tomatoes (diced)
  • Olive oil
  • Fresh basil (chopped)
  • Balsamic vinegar
  • Garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette or Italian bread into 1/2 inch thick slices and brush one side with olive oil.
  3. Toast the bread in the oven for 8-10 minutes or until golden brown.
  4. Whip the feta with olive oil until smooth and creamy, adjusting seasoning with black pepper.
  5. Mix the diced tomatoes, minced garlic, chopped basil, and balsamic vinegar in a bowl.
  6. Assemble by spreading whipped feta on each slice of toasted bread and top with the tomato mixture.
  7. Drizzle additional olive oil and balsamic vinegar over the top.
  8. Serve immediately, garnished with extra basil if desired.

Notes

Serve warm or at room temperature. Pairs well with white wine or iced tea.
