  • 23 medium potatoes, cubed
  • 2 tablespoons olive oil (divided)
  • 500 grams lean beef mince
  • Lettuce (shredded)
  • Cheese (dairy-free or regular)
  • Pickle slices
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (Dijon or yellow)
  • 1 teaspoon pickle juice
  • ½ teaspoon garlic powder (for dressing)
  • ½ teaspoon smoked paprika (for dressing)

Instructions

  1. Prep your ingredients by washing, peeling, and chopping potatoes into cubes.
  2. Season the mince by mixing beef with spices in a bowl.
  3. Cook the potatoes in olive oil until crispy, about 10-15 minutes.
  4. Cook the beef in a separate skillet until browned, about 7-10 minutes.
  5. Prepare the dressing by mixing mayo, ketchup, mustard, and spices until smooth.
  6. Assemble the bowls starting with crispy potatoes, add beef, lettuce, cheese, pickles, and drizzle with dressing.
