Chocolate Raspberry Tart

A delightful dessert that combines rich chocolate with tart raspberries, perfect for special occasions.

  • 22 Chocolate Sandwich Cookies (like Oreos)
  • 1/4 cup (4 tablespoons) melted butter (vegan or regular)
  • 2 (13.5 oz) cans full-fat coconut milk or 1 cup heavy cream
  • 1/2 cup Domino® Golden Sugar
  • 12 oz semi-sweet chocolate, chopped
  • 1/4 teaspoon salt
  • 1 pint fresh raspberries

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C). Crush the cookies into fine crumbs using a food processor or rolling pin. In a bowl, combine cookie crumbs and melted butter. Press mixture into a tart pan, covering the bottom and sides. Bake for 8–10 minutes, or until firm.
  2. Make the Filling: Scoop the solid part of the coconut milk into a bowl. Add Golden Sugar and whip until smooth. Melt chocolate in intervals, then mix with the coconut cream and salt until combined.
  3. Assemble the Tart: Pour chocolate filling into cooled crust and chill for at least 4 hours. Top with fresh raspberries before serving.

Notes

For extra filling, serve as mousse with raspberries. Add crushed nuts or chocolate shavings for extra texture.
