Butternut Squash Bread

A moist and flavorful bread made with butternut squash, perfect for fall mornings.

  • 1 cup pureed butternut squash
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by greasing a 9×5-inch loaf pan or lining it with parchment paper.
  3. Mix the wet ingredients: In a large bowl, combine the pureed butternut squash, vegetable oil, sugar, eggs, and vanilla extract. Whisk until well blended.
  4. Combine the dry ingredients in a separate bowl, whisking together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  5. Incorporate the dry ingredients gradually into the wet mixture, folding gently until just mixed.
  6. Pour the batter into your prepared pan, spreading it evenly.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the bread in the pan for about 10 minutes before transferring it to a wire rack.

Notes

For added flavor, consider mixing in chopped nuts or chocolate chips. This bread freezes well once cooled.
