A flavorful twist on the classic chicken salad using Greek yogurt for a creamy texture and a tangy kick.

  • 1 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup grapes, halved (optional)
  • Salt and pepper to taste
  • Lettuce leaves for serving (optional)

Instructions

  1. Prep the chicken by shredding the rotisserie chicken into a large mixing bowl.
  2. Mix the Greek yogurt, mayonnaise, and Dijon mustard in a separate bowl until smooth and creamy.
  3. Combine the chopped celery, red onion, and grapes (if using) with the chicken, then pour the yogurt mixture over the top and gently fold together.
  4. Season with salt and pepper to taste, adding more spices or herbs if desired.
  5. Chill in the fridge for at least 30 minutes to allow the flavors to meld.
  6. Serve the chicken salad on lettuce leaves or a plate, with optional drizzles of olive oil or extra herbs for garnish.

Notes

For a healthier option, use non-fat or low-fat Greek yogurt. Make in advance for enhanced flavor.
