Mini Apple Pies

Delightful mini apple pies that capture the essence of home and happiness, perfect for family gatherings or cozy nights in.

Ingredients

  • 2 Apples, peeled and chopped into small cubes
  • 40g Salted Butter
  • 50g Brown Sugar
  • 12 tsp Ground Cinnamon
  • 1/4 tsp Nutmeg
  • 2 tbsp Lemon Juice
  • 1/2 tsp Cornflour
  • 3 tsp Cold Water
  • 2 Sheets Frozen Shortcrust Pastry, thawed
  • 1 Egg, whisked for glazing

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Prepare the filling by melting butter in a saucepan, then adding apples, brown sugar, cinnamon, nutmeg, lemon juice, cornflour, and cold water. Cook for 5-7 minutes.
  3. Roll out the shortcrust pastry to 1/8-inch thickness and cut into circles.
  4. Assemble the pies by lining muffin tins with pastry, filling them with the apple mixture.
  5. Top the pies with pastry, seal edges and cut slits for steam.
  6. Brush the tops with whisked egg for a golden finish.
  7. Bake for 20-25 minutes until golden brown.
  8. Cool slightly before serving.
