  • 8 cups of sugar
  • 1 tablespoon of bottled lemon juice
  • Bourbon, to taste

Instructions

  1. Prepare your jars by sterilizing them in boiling water for 10 minutes.
  2. Halve the figs if using whole ones to make them easier to pack.
  3. Make the syrup by combining water, sugar, and lemon juice in a large pot over medium heat.
  4. Add the halved figs and a splash of bourbon to the syrup, simmering for 10 minutes.
  5. Fill the sterilized jars with figs and syrup, leaving half-inch headspace.
  6. Seal the jars with lids, ensuring a good fit.
  7. Process the jars in a boiling water bath for about 10 minutes.
  8. Cool down the jars on a clean towel and store in a cool, dark place.

Notes

Let the bourbon figs sit for a few weeks to enhance flavor before opening. Can be served with cheese, yogurt, or as a dessert topping.
