Sweet Hawaiian Crockpot Chicken

A delightful and easy five-ingredient meal that brings sweet, savory, and tangy flavors together, perfect for busy weeknights.

  • 2 pounds boneless skinless chicken breasts
  • 1 cup pineapple chunks
  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 2 cloves of garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Prepare the chicken by placing the chicken breasts at the bottom of your slow cooker.
  2. Add the pineapple chunks and pineapple juice over the chicken.
  3. Mix the soy sauce and brown sugar in a small bowl until dissolved, then add the minced garlic and mix well.
  4. Combine the sauce mixture with the chicken and pineapple in the slow cooker, stirring gently.
  5. Cover the slow cooker and set it to low, cooking for 4-5 hours or high for 2-3 hours.
  6. Thicken the sauce by mixing the cornstarch with water to form a slurry, then stir it into the sauce and let it cook for another 10-15 minutes.
  7. Serve over rice and enjoy!

Notes

Serve with a side salad or steamed vegetables for a complete meal. Adjust seasoning to taste and consider adding red pepper flakes for spice.
